- The People - Don Baltazar Cruz Gómez is Del Suelo’s master mezcalero, raised in a family of agave cultivators and deeply rooted in mezcal traditions. Alí Rogelio Ramírez, though not from a mezcal-making lineage, traveled across Oaxaca to learn the craft. He later invested in Del Suelo’s palenque and now collaborates closely with Don Baltazar, blending innovation with tradition. As co-owner, Alí also champions sustainability and community in the mezcal world.
- The Process - Mezcal Artesanal is crafted using traditional methods: mature agave is hand-harvested, slow-roasted in stone-lined pits to develop its smoky flavor, naturally fermented with wild yeasts, and distilled to create a spirit that reflects heritage, nature, and skilled craftsmanship.
- Our Values - The mezcal brand is dedicated to sustainability and fairness. All agave is grown using sustainable farming, preserving soil health for future generations. The company upholds fair standards, ensuring everyone—from farmers to artisans—is respected and paid fairly. Additionally, their commitment to the environment extends to packaging, using bottles made from 100% post-consumer recycled "wild glass" that helps reduce manufacturing waste by up to 25%.
